French Tarragon - 4" Pot

French tarragon (Artemisia dracunculus 'Sativa') is a perennial herb prized for its distinctive anise-like flavor with subtle peppery and minty notes. Unlike the less flavorful Russian tarragon, true French tarragon is sterile and must be propagated through cuttings or division. It grows 1–2 feet tall with slender, bright green, lance-shaped leaves and small, inconspicuous yellowish-green flowers in late summer. Thriving in well-drained soil and full sun, it prefers mild climates and can be finicky in hot, humid conditions or heavy soils, making it a classic choice for herb gardens in temperate regions.

In the kitchen, French tarragon is a cornerstone of French cuisine, especially in fines herbes blends, béarnaise sauce, and chicken or fish dishes. Its fresh leaves add a bright, aromatic lift to vinaigrettes, compound butters, egg preparations, and potato salads. The herb is best used fresh or added late in cooking to preserve its delicate flavor, as heat diminishes its intensity. Dried tarragon loses much of its character, so home gardeners and cooks often grow it for year-round use, freezing leaves or making tarragon vinegar to capture its unique taste.
