Galilee Spinach is a distinctive open-pollinated heirloom associated with the Galilee region. Its bright green leaves have a pointed, triangular shape that sets it apart from rounder and more heavily savoyed spinach varieties. The tender leaves have a pleasantly mild spinach flavor and can be harvested young for salads or allowed to size up for steaming, sautéing, soups, and other cooked dishes.

Hardy Annual. Galilee is a fast-growing true spinach valued for its unusual leaf shape and better heat tolerance than many traditional spinach varieties. It is still a cool-season crop, however, and prolonged heat or long summer days can cause plants to bolt.
