Organic arugula sprouting seeds produce tangy, peppery shoots and microgreens for salads, sandwiches, wraps, soups, and garnishes. Arugula seed becomes mucilaginous when wet, so it should not be soaked or started alone in a jar.
Spread the dry seed evenly over a thoroughly moistened, food-safe growing surface such as an unbleached paper towel, coffee filter, suitable grow mat, or unglazed clay sprouter. Mist lightly at least twice daily and keep the surface evenly moist without standing water. Loosely cover during the earliest stage, then provide light and airflow as shoots develop. Surface-grown sprouts are generally ready in 4–5 days; microgreens commonly take 8–12 days.
