This enormous early 20th-century confit pot from southwestern France features a charming apricot blush glaze, and is a prime example of traditional French culinary stoneware.

Confit pots were originally used to preserve meats, particularly duck and goose, utilizing the confit method where the meat is slowly cooked and stored under its own fat. This process not only enhanced flavor but also ensured long-term preservation before refrigeration was common.
