German Red seed garlic is a Rocambole hardneck carried to North America by German immigrant growers, with historical plantings documented in places such as Idaho. Its exact German source region is no longer clear, but the variety became one of the best-known early hardnecks in American gardens. Red-toned easy-peel cloves, edible scapes, and rich spicy flavor sustain that reputation.

Mix & match savings. This item is eligible for the Garlic Mix & Match discount. Combine eligible seed garlic and shallots to save 10% at 3 pounds, 15% at 10 pounds, or 20% at 30 pounds. The discount is applied automatically in the cart.

German Red gives northern gardeners the full Rocambole experience: broad spring leaves, coiling scapes, colorful cloves, and rich flavor worth eating sooner rather than later. The bulbs typically carry 8–10 easy-peel cloves with brown-to-red skins beneath pale wrappers. This is not simply a storage staple—it is a garlic to anticipate, taste, and share. Its immigrant-garden history makes the harvest even more meaningful.

The flavor is rich, spicy, and sometimes described as musky, with a lingering finish that stays noticeable in cooked dishes. Use raw cloves in salsa, pesto, dressings, and marinades, or roast them to develop sweetness for soups, potatoes, meats, and spreads. Large cloves are convenient for slicing and whole-clove recipes. Tender scapes add a milder garlic note before bulb harvest.

When growing German Red, favor a cold-winter location with full sun and fast-draining spring soil. Plant in fall, then keep the bed evenly moist once active growth resumes without allowing soggy conditions. Cut the scapes at the curl and use them fresh. The bulbs are ready around mid-summer as lower leaves brown; lift them with care, cure in an airy shaded spot, and enjoy them before your long-storing softnecks.
