Organic Norquay seed garlic is a Canadian Porcelain hardneck associated with planting stock from Alberta and selected for northern conditions. Its name and distribution reflect the Canadian heirloom network that preserved cold-climate garlic outside large commercial channels. Certified organic Norquay offers tight bulbs, a few large easy-peel cloves, edible scapes, spicy flavor, and Zone 3–9 guidance.

Norquay feels right at home in a northern garlic patch. This Canadian Porcelain meets a short, cold season with sturdy upright growth and finishes with 5–8 generous cloves beneath clean wrappers. The compact clove count makes planting and cooking easy, while scapes provide a welcome first harvest as summer begins. Grow it when you want a cold-climate heirloom that looks substantial in the basket and works hard in the kitchen.

The flavor is spicy and robust, with direct heat when raw and a rounder, savory character after roasting. Use minced cloves in salsa, pesto, dressings, and marinades, or cook them into soups, braises, potatoes, and roasted vegetables. Large cloves are particularly convenient for whole-clove recipes and garlic confit. Tender scapes can be grilled, sautéed, pickled, or blended into pesto.

When growing Norquay, use a sunny fall-planted bed that receives dependable winter chill and drains well during the spring thaw. Once growth resumes, keep moisture consistent and protect the shallow roots from weeds. Pick the scapes while they are curled for a tender early crop. Around mid-summer, lift the bulbs when lower leaves have browned but protective skins remain, then cure them in shade with excellent airflow.
