Thyme 'Doone Valley' (Thymus citriodorus 'Doone Valley') is a charming, low-growing variety of lemon thyme known for its intensely lemon-scented foliage and striking variegation. The evergreen leaves are dark olive green with golden-yellow spots or margins that intensify in cooler weather, often developing red tints in winter. This mat-forming subshrub reaches just 2–4 inches (5–10 cm) tall when not in bloom, extending to about 6 inches (15 cm) with flowers, and spreads up to 18 inches (45 cm) wide, creating a dense, aromatic ground cover.
It is hardy in USDA zones 5–9 (sometimes reported to zone 5 with protection or zone 6 reliably), thriving in full sun and well-drained, neutral to alkaline soil. While its vibrant lemon aroma is delightful, the flavor does not hold up well in cooking like standard lemon thyme. It excels as an ornamental plant for rock gardens, between stepping stones, containers, or patios, where its fragrance can be enjoyed fresh. The pink to lilac summer blooms attract bees, and leaves serve beautifully as a colorful, scented garnish or in potpourri and herbal crafts.
